My younger daughter refused to eat Broccoli- the super health vegetable. Broccoli is very high in vitamins and essential minerals.
This quick and Happy dish happened by accident. One day when I didn't have enough time to prepare lunch.. in a jiffy- I cooked rice with Broccoli and corn and some grated carrots. It turned to be delicious and we both were Happy.
Quick recipe here:
Soak 1/4 cup rice. You will need 15 florets of Broccoli, 1/4 cup corn and 1 grated carrot. In a deep pan - add a tbs of butter, 1 bay leaf, 1/2 inch cinnamon stick, a pinch or two of turmeric powder and salt to taste. Saute the veggies. Mix the rice and cover to cook on slow flame for 15 min after adding about 1/4 cup of water. Easy, fast and Happy. My daughter, that day asked for a second helping!!.
